New Orleans Cookbooks.

what are the best? i look at the from time to time in various book stores but i have never really studied them...
give me some suggestions so i can amazon a few.

The Plantation Cookbook put out by the Junior League of New Orleans is my favorite BY FAR!!! I have two copies. The best crawfish etouffe recipe I have ever cooked/tasted/seen. Very long and tedious, but so worth it.

people from nola on this board talk about The Plantation Cookbook more than any other, but i have never seen it so i can't vouch or describe.

Does the difficulty or time to prepare a dish make any difference to you?
I agree with glass on the Plantation Cookbook. I disagree that the etouffee is tedious, though. It's just a "follow the directions" recipe as is most every recipe in that book. Very few of the recipes need any adjustments, unless you simply have some personal preferences.

I just bought "Cooking Up a Storm, recipes old and new from the Times Picayune", for a friend's birthday. It's full of great recipes from lots of the favorite restaurants and cooks. I may have to scan a bunch of them before I wrap it, or maybe just get my own. It's wonderful.

I'm not into Bora Bora. I pefer snow on the outside with many large windows and blazing fireplace on the inside.

John Besh's cookbook "My New Orleans Cook Book" is pretty good.
I also have Ralph Brennan's "New Orleans Seafood Cookbook" and it's good too.
Both have good directions and map out everything.
I will have to try out some of the other books mentioned.

My New Orleans by John Besh is really good. John folse has a couple of really good books as well but it's more of a s. Louisiana book.

2 copies of the Plantation cookbook in our house. It is the bible for cooks, everything else is subordinate.

If you enjoy Paul Prudhomme's food, then I highly recommend his first cookbook, Louisiana Kitchen. You must watch his pepper measurements, however. He's a bit on overload in some of the recipes. Otherwise, if you read the recipes in steps, you will find that they aren't nearly as daunting as they seem to be at first glance. The instructions are a bit wordy in some instances, which make it seem that the recipes take longer than they actually do.
If you can find La Meilleure De la Louisiane, buy it. It's an old spiral bound cookbook with recipes from some restaurants and other sources. Has a few jewels in it. I enjoy looking back at it, from time to time.

Thanks Grits, there was a recipe that was published in the Times that I loved. The recipe was published back in '92 and I lost it. It was for stuffed militon (sp) and it came from Chez Helene (sp) or some name like that. I ordered the cookbook from Amazon and I hope that the recipe that I lost is in it. If not, at least I'll have a cookbook from my home city.
