Avondale, there's a great mirliton casserole in the book, but it's originally from Carole Katz. Hope it works for you!

John Besh's cookbook "My New Orleans Cook Book" is pretty good.

I also have Ralph Brennan's "New Orleans Seafood Cookbook" and it's good too.

Both have good directions and map out everything.

i have looked at these books.. they look great but it seems when you associate a name like Besh or Brennan with it the price sky rockets... i would love to have these but maybe for Christmas

Well, mine is getting ragged, so I have to have at least one as backup, at all times. I also give them as gifts to special people who I know will appreciate this book. They can be hard to find, sometimes.

You won't regret the purchase. You can try everything in it, the first time, exactly as written and all dishes will be very good. After that, do your own thing. I make 3-4 recipes of the crawfish cardinale, at one time, during the holidays served in a chafer with French toasties. Never a leftover. I've served it as a side with tenderloin in a puff pastry shell. Some folks like it served over pasta. I can't begin to estimate the number of times I've made that dish.

It's a great book. When you get it, you can pick some recipes and pick our brains about them.

P.S. there's nothing wrong with buying used cookbooks. Some are so expensive, these days. I recommend that, highly, to folks starting a collection.

Do they carry this at Barnes & Noble? Or do you have to order it online or get it in New Orleans?

Do you like the River Road Recipes cookbook? I guess it may not technically be New Orleans, but...

That's a good price if you can get the free shipping with another book, in addition. I prefer that one to the second cookbook from Commander's. In fact, mine is coming apart. I could use another one, myself!

An oldie but goodie that I've used quite often is Restaurants of New Orleans by Roy Guste. It's also out of print and I'm on my second one.
LINK

Here's a photo of it.

LINK

It contains recipes from some extinct recipes as well as old recipes from current restaurants, some of which may have changed the originals a bit, which is another reason I like it.
