Fried okra Because that is what I am craving and you need to cook something greasy being your first cook.

OK, you've got an enameled cast iron dutch oven. It does not need seasoning, so you'll get no benefit from doing a fry or fatty cook as your first use of the pot.

I'd bake a loaf of no-knead bread in it for a first cook.
