New BBQ off government

Tried the new BBQ place off government Offsetsmokerbbq. Place is next door to Superior grill. Building is not ready yet but they had a popup food truck with limited menu out. Brisket was amazing. Pulled pork and chicken were very good. Sausage left a lot to be desired. Potato salad and beans were ok but nothing to write home about. BBQ sauce was ok also but brisket didn't need any sauce IMO. Looks like they are testing and getting feedback. Definitely recommend brisket if that's your jam for BBQ.

Went there today as well. Brisket is easily the best BR has, and right up there with TX joints.
I agree about the sausage, was a tad dry but the flavor was on point. Looking forward to this place being open daily.

Will have to try, but have you tried Smoke Bayou yet? That place is currently my favorite BBQ in the city.

You guys should try Envie Smokehouse. They pop up at Pelican to Mars every other weekend.

Thought I was going to be the only Primitive in the state so that I knew of until I saw theirs a few weeks ago
. 1k is a good smoker to start with, plenty of capacity to grow. Will have to give them a try, BR desperately needs something for BBQ. There is nothing from BR through Gonzales/Prairieville.

Any prices? Baton Rouge’s BBQ tends to be pretty expensive.

There seems to be a misconception that BBQ is cheap. Outside of chicken, and maybe pulled pork, BBQ is not cheap.

Oak and Smoke opened a storefront in Prarieville and their food truck had the best bbq in town and the sides were actually good.
That guy (he isn’t alone, lots of others and restaurants) shouldn’t even serve potato salad if he is going to scoop it out of a five gallon tub from Sams Club. Same with the beans.

Never went to the food truck but had people tell me about it. We were excited to go and try the storefront the other day. One and only trip for us, that was straight Bush's beans.

Best thing they serve is their smoked chicken wings. Every other BBQ item is below average.

I’ll go to Hanna q when I want a bbq sandwich and curly fries. Their sides are pretty good but that’s about it.
Also tried offset smoker yesterday and got the same as Glock. Sides were probably just simple since it was a pop up. Brisket was very good. Owners were very nice and engaging with everyone that showed up.

Texas BBQ is not cheap either. Even the chains like Rudys are pricey. You get to the smaller local shops and it can get up there.
I know somebody in banking that does financing for Black's BBQ down in Austin and he said the profit margin is very high. Like multiple millions for a couple of stores. So yes it is high, with a lot of profit.
Consider at 12 lb brisket and you sell it for 20/lb, you grossed $240 and you go through that in 15min at lunch.
