Simple no fail recipe. I season the ribs well (tony's, La hot sauce and black pepper)and pull the silver skin off the bone side. Put them on the grill medium heat to brown them. Meat side down til it gets the color you want then flip to bone side down (maybe 10 min or so). When they start pulling up the bone I sauce them and wrap them in foil.(you can add a little beer to the sauce if you like but not necessary) Leave them on the grill (cool side, no fire) bone down wrapped for 1 hr and 15 min. Temp on grill 2-300 degrees) Temp is not critical as long as its not too hot and above 200. I shoot for 250-300 on my grill. After the hour and 15 I take them out of the foil carefully. Sometimes they want to fall apart some depending on the rib. I put them back on the grill, low heat, meat down while I sauce the bone side, then flip and sauce the meat side. Leave them on til they dry a little and the sauce sets up (5-10 min). This has never failed me. I do find it works best using good ole Bulls Eye original. Some of the others i've tried tend to dry out during the wrap or char some. Never had that issue with the Bulls Eye. This is not a BBQ competition recipe as these usually are fall off the bone, but its great for a quick rib meal. If you have limited area on your pit you can do 1 or 2 at a time using an oven to do the wrap time. That way you can cycle through as many as you need.

Forget everything you know and cook them to temp. If it's a gas grill, just light one side and put the ribs on the cool side. Cook until they reach 200 internal. Perfectly tender, rendered fat, but not fall off the bone mush.

Not to be mean, but if you've made "disastrous" ribs in the oven then the limitations may be on you. I've made good to great ribs in the oven, on a charcoal grill, a propane grill, and a smoker. They aren't hard.

Those look great for oven ribs. I love that he says not to cook them until the meat falls off the bone. I can't stand ribs that way. May as well not bother with ribs if you cook them that way. Just make a pork roast.

I love fried ribs. A friend soaks them in Tony's Creole butter seasoning for some hours and then puts them in seasoned flour and fries them. They are superb.

What temp did you cook the ribs to before throwing in the fryer? I plan on doing something similar but on the smoker and not sous vide

They're not worthless for a gas grill. The OP will need two of them though to get the smoke he needs.

They can be ignited and put in the drip pan. I've done it with my weber gasser.

Get a digital thermometer and adjust accordingly. It's pretty easy.

I been playing around with temps but last few ones were 155 for 24hrs in the SV. I may try higher temps next time. Maybe I can go higher temps for shorter time…still fooling around with it. You want long enough for them to be tender but not too long so they don’t overdo in the fryer. I also don’t want to SV all the juice/fat out at higher temps. Haven’t gone above 155 yet. I find the SV makes them come clean off the bone vs just straight fried. Maybe a lower fry temp for longer may help but the long SV helps loosen everything up imo. I used chicken fry in that last pic. I also smoked at 150 on my master built gravity smoker for about 30-45 before the bath. Drizzle with bbq sauce if ya like.

Update: I pretty much followed this recipe and they turned out very very good. LINK One change, I did not turn the grill up to 375 after wrapping, just left them wrapped and the grill around 250-275 and let it go for an hour and a half or so.

Used the foil packet with apple wood chips, kept grill at 250ish, wrapped after 2 hours, let them go an hour and a half (checked temperature once they got to 190 I removed from wrap) applied a little sauce and let go another 30 minutes. Turned out great. Thanks for the recs FDB, got some great ideas and will be buying a sous vide just to see what's that all about. Yard Bird rub FTW.
