Need Boiled Crawfish Lafayette: No Sprinkles

Sprinkles are for cupcakes, not crawfish. That isn't up for debate. Where can I find them boiled in Lafayette the proper way (seasoned boil & soaked). I have been to several places that almost ruin them with the gritty & salty seasonings sprinkled heavily over the mudbugs.

Go to Abbeville just down the road, Cajun Claws or Richards...hard to wrong down there.

I'll give Dwight's a try soon. I'm familiar with them but I wasn't sure if they sprinkled or not. When I'm up for a day trip, I'll give the joints in Abbeville a try. I like to get the oysters at Dupuy's when I'm down that way.

It's b/c when you're boiling 100+ sacks of crawfish it's virtually impossible to have any consistency. I've said this before and got hammered on it (people said I had no clue what I was talking about

Crawfish Time sprinkles the hell out of them. I ate there a couple of days ago and that inspired this post. They were big and good, don't get me wrong. However, if I'm paying top dollar for crawfish I want them done the proper way.

To be fair I've just eaten crabs at Richards (and. Can't even remember when it was its been so long). My folks are from there and they go down often. Last time, they ate crawfish at Cajun Claws and my dad said they were damn good. He's is a soaker, and I just passed on the recommendation from his comment.

I always boil and soak in heavily seasoned water. However, for my large boils, some of the people wait until others have eaten and request some (don't cake it) dusting on the outsides.
When I do that, I pour lemon juice on the crawfish so the seasoning can almost "melt", close the chest for exactly 60 seconds, then pour out on the table.
I always make that the last batch or two, though. First batches contain zero dusting.

I know quite a few people in the Acadiana area and none of them care for the sprinkles or do at at home boils. They wrinkle their noses when I mention it. That's what is so curious. Maybe it is a large scale consistency issue- but I've never had a boiling place sprinkle them in the New Orleans area.

If you put lemon juice and use a blend seasoning from targil that is made to melt better which these places do most of the time you won't know they sprinkle if done right
