My incredibly delicious chicken salad

- 2 gala apples cubed
- 2 large or 3 small roasted chicken breasts cubed
- one third vidalia or red onion, coarsely chopped
- half cup of toasted almonds cut in half (toast in pan until they start to smell yummy, but don't burn them)
- one and a half cups of fresh broccoli chopped coarsely
- one third to one half cup mayo
- 4 tbsp's rice vinegar (or other white vinegar)
- one tsp's black pepper (or more... I love black pepper)
- one tsp salt (or more)

Mix the vinegar, mayo, salt, and pepper then blend into the other ingredients. Refrigerate overnight in a covered container. Great on a summer day. Don't skip the almonds.

I'm not sure if this is true but someone once told me that it's crucial to mix the mayo mix while the chicken is still hot. Allegedly this helps the flavors combine better.

Just thought I'd add that. Sounds like a good chicken salad mix you got there partner

You could add some tarragon to give it a unique flavor too. Tarragon and almonds are awesome in chicken salad.

My recipe is nearly the same except I add a bag of chopped fresh spinach, finely diced celery, 1/2 red and green finely chopped bell pepper, SLIVERED toasted almonds, fat free mayo and no vinegar. And you are so right, DONT skip the almonds!

Mine is more basic/simple. I could never like almonds in a chicken salad as I like the smoothness in texture.


Chicken Salad

-3 small cans of chicken
-6 boiled eggs
-1 Small onion chopped fine or even blended
-1/4 of a bell pepper chopped or blended
-1 tsp of sweet relish and 1 tsp of dill relish

Season to taste

-1/2 cup of mayonnaise, if too dry add more
-Crumble drained chicken and add all other ingredients
Mix Well

Better if sits overnight

Slivered almonds are the way to go.
My wife likes to add craisins to her mix also.

Sounds too fancy for me. I like a basic chicken salad. Chicken, mayo, onion, little garlic, salt, pepper, bellpepper. I like a LITTLE crunch in there but I think nuts would be too much.

I like the smoothness and don't find the bell's to be THAT crunchy.

No offense Rex, but I'm just a plain, crunchless chicken and potato salad kinda guy. But if I wasn't, this would do it for me!

I like to put in grapes and almonds on occasion ala Neiman Marcus Zodiac Room.

You have the best pre made chicken salad in the world right there at Calvins. Why bother with the Victoria Secret Zodiac room...

my favorite chicken salad is the Whole Food Sonoma chicken salad.

1 cup mayonnaise

Salad
2 pounds boneless, skinless chicken breasts
3/4 cup pecan pieces, toasted
2 cups red seedless grapes
3 stalks celery, thinly sliced

Sometimes, I add the grapes and almonds to Calvin's chick salad.

I LOVE the Zodiac Room! Complimentary demi of chicken broth and wonderful popovers with strawberry butter....yum... my standard meal is the chicken salad plate with fruit andd poppy seed dressing,mandarin orange souffle and the little muffin. The chick salad is a little chunkier than I like, but it's good. Great lunch.
