personally, I like to peel and core my apples then simmer them on the stove in a little water, brown and white sugar, vanilla and a touch of butter til they are kind of soft, then add them to a crust and bake... for me, it beats overcooking the crust to make sure the apples are cooked all the way.....

My recipe is nearly the same except I add a bag of chopped fresh spinach, finely diced celery, 1/2 red and green finely chopped bell pepper, SLIVERED toasted almonds, fat free mayo and no vinegar. And you are so right, DONT skip the almonds! ...

Most people I know use Velveeta because they either can't make a decent white sauce or they don't like it... when I make mine, they'll add cheese to the top... actually, that is kind of insulting now that I think about it... :wah:...

This is a classic family favorite in my house. If one catches it playing, the rest of the family seems to gravitate in sits to watch too.
