personally, I like to peel and core my apples then simmer them on the stove in a little water, brown and white sugar, vanilla and a touch of butter til they are kind of soft, then add them to a crust and bake... for me, it beats overcooking the crust to make sure the apples are cooked all the way...
oh, and if you look up a basic cake recipe, minus the wet ingredients, and add to a stick or so of butter, it makes for a really great Dutch Apple Topping...
google Brown Betty and Apple Crisp recipes for a lot of "from scratch" ideas...

either crawfish cornbread stuffing or
long grain brown & wild rice
and
fresh baby spinach & strawberry salad
(fresh spinach and or dark mixed spring greens, sliced strawberries, freshly toasted almonds, shredded cheese (just a little and your choice, I like colby-jack) whole grain croutons and lightly toss w/rasberry or strawberry vinegrette)... you can add other veggies but I find this simple recipe is very good and doesn't overdo it.

My recipe is nearly the same except I add a bag of chopped fresh spinach, finely diced celery, 1/2 red and green finely chopped bell pepper, SLIVERED toasted almonds, fat free mayo and no vinegar. And you are so right, DONT skip the almonds!

Most people I know use Velveeta because they either can't make a decent white sauce or they don't like it... when I make mine, they'll add cheese to the top... actually, that is kind of insulting now that I think about it... :wah:
