Kitchen Scale. I find a lot easier to weigh items as opposed to using measuring cups.

For a basic baking toolkit:
Scale
2 loaf pans
1 9x13 cake pan
2 8 or 9” round cake pans
Pie pan
Rolling pin
Dough scraper
Whisk
Silicone spatula spoon
Wooden spoon not used for savory cooking
Half sheet pans
Parchment paper

Different cutting boards. One for vegetables, one for chicken, one for seafood, and one for pork, beef and wild game.

Good quality chefs knives, knife sharpener, tongs, etc

I've never understood the need for separate cutting boards.

Either the board is contaminated or it's not. Cutting chicken on a board contaminated with previous chicken doesn't make matters better.

I have several cutting boards, but only use synthetic material boards like corian, hard plastic or those thin, flexible plastic type ones that come in 3 & 4 packs.

I will wash any board I use with soap, a scrubber and hot water when done cutting things. If you wash your cutting boards properly, you should not have to worry about contamination.

It was said earlier but if I don’t have a instant read probe thermometer, I get frustrated.

I can make do with almost everything else.

Heavy duty aluminum foil, the extra large wide sheet kind. Makes clean up a breeze by lining baking sheets with them. You can also keep the oven clean by placing baking pots or dishes on a foil lined baking sheet to avoid spillage. Also handy if you can't find that one tupperware lid you're looking for.

Trying to name a few things not already mentioned...
Non-stick silicone baking mats, save time on cleanup & double as a non-slip mat for cutting boards

Microplanes, never mince garlic or ginger again. Also good for fresh grated cheeses & hard spices like nutmeg & cinnamon.

Good tongs, I like 12" Edlund locking tongs

Plastic bowl scraper, it's like a third hand. Great for transferring chopped herbs and cut food products from the cutting board to a bowl or cooking vessel.

I prefer a bench knife for this:



The plastic bowl scraper is good for getting dough and other items from a bowl though. I just prefer the rigidity of the bench knife for getting things off the board.

A set of bowls you can use for mise en place, preferably glass. These little guys are inexpensive and are damn good for mise en place but obviously not perfect for every ingredient.

Outside of the lack of a sharp knife, there's little that's as frustrating when cooking at someone else's house than a lack of spices. Even if you're just snagging one of those cheap spice racks from Marshall's or something, you've GOT to have a nice line-up of spices available to you when you're cooking.

A couple of other items I find indisposable:

Yeah but, the plastic bowl scraper is more versatile & can do both tasks you described plus you can even divide dough & chop softened butter with it... Besides, it's lightweight and fits perfectly in my back pocket. If you could only have one, the plastic bowl scraper trumps a bench knife for me.
