When my crawfish start to soak I drop them in for a minute and 42 seconds. Any longer and you're over cooking them.

Crab boil, some salt, and some lemons...cook them before you add the pepper and the rest of your seasonings. My friends cook for vegans every boil and this is how they do it. They save some mushrooms and corn for real books as well.

You might want a vegetable plate in case they don't want the mushrooms if they've been in with the crawfish. That way you're covered no matter how strict the vegan takes their food.

I agree that having some type of veggie plate separate from the boil is the best idea. If this person is a true vegan, mushrooms cooked in crawfish juices probably won't work.

Why not just cook them in same water before crawfish?

ive never heard or seen that growing up in south la. Always thought you need to at least catch a boil back after dropping them in before cutting off flame.

Does that even cook them? Id be worried about killing off the all nasties.

Definitely don’t do in the boil, that’s not going to be vegan friendly. We do a separate, smaller pot with veggies and shite that’s seasoned a little differently for the people in the family that are on a diet that really watches their salt intake. No meat goes in, so it’s perfect for individuals who have more personal dietary restrictions (i.e., vegetarians/vegans). It’s been a much appreciated gesture that adds very little effort while making someone else feel included. To me, that’s the biggest part of the boil anyway.

I know this is a joke, but am I the only one who puts them in at the very beginning with my potatoes and garlic and everything? I like my shrooms with some kick. They’ll take your breath away.

I put everything in at the beginning.. potatoes garlic sausage mushrooms onions lemons celery etc

Mushrooms are not an uncommon allergy. When they are put in the boil they contaminate the entire boil.

I was boiling a few sacks for a friend about 6 weeks ago and someone had the bright idea to toss in mushrooms and brussels sprouts into the soak without letting anyone know. One woman who is extremely allergic to mushrooms had an anaphylactic reaction when eating the crawfish and had to be taken to the ER. She had never had an allergic reaction to any of my boils previously.

On top of the allergy issues, mushrooms are like biting into a nasty sponge.
