Monday red beans cooking away

Got 2 lbs. of Camelia Red Beans, 1 lb. of seasoning ham, trinity, garlic, bay leaves, a bit of Slap Ya Mama, Worcestershire sauce and a few shots of hot sauce cooking down in a big pot on the stove right now.
Will add my homemade andouille I smoked last week to the pot about 1 hour before they are done and then cook some rice and cornbread to go with it.
Love my red beans on Mondays.

I've gotten into the routine of cooking mine in the instapot on Mondays.
Cook on low all day then hit the pressure cook for 30-45 minutes to break down the beans a little bit.

On butter beans, I typically overnight soak, then cook in the crockpot all day just covered with chicken stock. I have some Conecuh that I need to use. Red beans sounds good.

Perfectly fine by me. Beans are beans, no matter how you cook them.
I just like to do mine on the stove since I'm retired and have the time to do them. I know several couples that still work and they do them in a crockpot to be ready when they get home.
At least they aren't heating up cans of Blue Runner Beans. That's where I draw the line.

I remember one time I needed to provide a meal for a meeting on short notice. I got two gallon size cans of creole cream style Blue Runner red beans. I open the cans and dumped the cooked red beans into a pot and added chopped trinity, crushed garlic, bay leaves, cut up bacon, sliced smoke sausage and a little chicken stock. I heated for an hour stirring occasionally. I also made cornbread and coleslaw. It was a hit. I received a lot of compliments. Several people asked for the recipe and were surprised when I said the red beans came out of a can.

How many do you feed with that much? I'm doing one lb tonight. Dinner for my wife and I then a lot left over for when I'm hunting this weekend.

I'm intrigued. Are they added instead of smoked sausage or do you mush them down so they blend in with the beans?

I remember hearing years ago that if you puree a few hot dogs and add to the beans it will taste like Popeyes Red Beans.

I'm only feeding 3 people, but I do put a few quart containers in the freezer for later use.
I usually cook 4 lbs. at a time but I recently loaded up on pork butts when they were on sale last week and made a bunch of sausage to go in the freezer, so room is limited.
Oh, and throw away those cans of Mystery Meat and get some real smoke sausage.

I also heard this from Tom Fitzmorris years ago. He said a caller into his radio show mentioned this and Tom tried this and liked it. After that Tom said he always cooked his red beans with pureed hot dogs. Has anybody done this with their red beans?

Beans aren't something I eat before or while I'm hunting ... not when I'm trying to not give away my location.

Ok, I'm not from Louisiana, though I did live in Baton Rouge for a while as a kid. A good friend of mine who does live there told me of a quick hack -- a large can of Blue Runners + a can of Margaret Holmes Red beans and rice. You then add sausage and I make a cornbread to go with it. Every time I serve it, people go back for seconds. Now, I've made it from scratch too, with Camellia beans, trinity, and so on, but the hack version is pretty darn good to me. Hate if you will.

I throw a few cans in my boat every year in case I forget other snacks. They were in the picture to upset my wife.
