I'm starting a 22 lb Kurobuta pork shoulder tomorrow for the game. Also doing 2 more Boston butts, 2 racks of Wagyu beef ribs, smoked hot dogs, 4 racks of St. Louis ribs, beans, Mac and cheese, candied jalapeno corn muffins, about 60 Creme Brulees, and smoked chicken Jalapenos.

Think that covers everything. Timing will be difficult until I get another trailer smoker.

Wanted to do a “crispy smoked” belly to add some varying texture to the tacos. Scored the meat side of the belly and rubbed my al pastor marinade into all the crevices. Set it into a pan of the marinade and salted the skin so we get a nice top layer of chicharrones.



Will sit uncovered in the fridge for 24hrs then go on the smoker early in the morning

Belly turned out unbelievable. The juiciest smoked pulled pork on bottom with crunchy cracklin on top. Not gonna lie, one of the best things I’ve ever ate.

Smokin some chicken tits that are over a pound each..After the chicken salad thread I am in the process of making that. Also have some beef short ribs on there for Monday night..hope they make it to Monday night..

Just made a chicken pasta that I guess could be called Pastalaya?

Made it exactly like jambalaya and added a container of heavy whipping cream and some parmesan at the end.



Also had bruschetta and crawfish dip.

About to fry some shrimp and fish and jalapeño hush puppies.
