This is the liquid the tamales are simmered in. You don't steam Manuel's tamales.

Thx to everyone for the 411 as it looks like Guillory's, dude on Carrolton by WD, and Ben's Pizza in Arabi are my best options at buying. I'll reach out to Jolie Meaux here in Lafayette and see if she sells tamales or has any suggestions. My plans are to buy a dozen from each vendor, sample the goods, then see if I can duplicate their product. If I can make crawfish bisque several times per year, I shouldn't have a problem with tamales. I'll report back my findings in several weeks.

I don't understand folks saying Guillory's are close to Manuel's. Guillory's are hard and dense, Manuel's were loose and greasy. Guillory's do have some grease, but they're not like Manuel's.

there are a million ways to make tamales, just like a million ways to boil crawfish, make boudin, and make gumbo. It's all about family recipes passed down through generations. Based on my memory from the early to mid-1980's, Manuel's tamale was the size of your index finger, had around 75% meat, with a small layer of 25% corn meal and wrapped in parchment paper. No masa or corn husks. Definitely soaked in the juices and cooked vs. steamed. They were double wrapped in Times-Picayune newspaper. Truly a unique NOLA food memory that many still crave today.

What people must admit to be honest, is that what made Manuel's so different and memorable is that you are tasting that savory beefy grease.

After moving to the Northshore 20 years ago, I still make regular pilgrimages down to da Parish for Ben’s pizza & tamales. They used to sell Manuel’s, and the ones they sell now are for all practical purposes indistinguishable from Manuel’s. Maybe a tiny bit less greasy and a little larger, but as far as my taste buds are concerned, they are Manuel’s.

I was going to suggest Guillory’s as well. Their tamale poboy with chili, cheese, and onions is legit!

I remember the original loction of Ben's, which was on a service road behind the Atlantic Thrift on St Bernard Hwy - not far from where it is now. That place used to print $ since it exised pre-Pizaa Hut, Dominoes, etc.

What was the name of the tamale place on Gov't St? My buddy lived near there and it was fantastic. This was in the late 80's. I've been in Houston over 20 years and can tamales anytime I want, but those I remember.

Showing your age here.

I too remember that location and bought many pizzas from there back in the day when I lived in the Lower 9th.


When I bought my 3rd house in Mid-City, it is located about 6 blocks from where Manuel's Hot Tamales was headquartered on Carrollton Ave.

Yeah - I'm in the "cellared" wine category. There also was a fried chicken place on that same service road called Elliott's which was fantastic. We used to make weekly runs from St. Claude Ave down to that street for either the fried chicken or pizza. We had access to the tamales from a cart in from of the family bar. We had a cat that treated the corn husks like they were crack - it would hiss at you if you didn't leave any on the ground, and then would lick them dry and afterwards rub its body all over them.

Well, with the mention of Ben's near the Atlantic Thrift cemented it for me that you had to be near my age at least.

I'll be 70 in a few weeks and remember the Atlantic Thrift Store by the RR tracks in Arabi. They were the precursor for Walmart's business model----buy foreign goods, sell cheap.

I remember Elliots too, but didn't do much business with them.

Hell, I can remember a time when Rocky & Carlo didn't have their own place yet. They were working for a place called Angelo's on St. Bernard Hwy. near where their current location is now.
