Making Donald Link's smothered pork roast tonight

Currently roasting in oven.
Will snap a pic when I baste it and get one of the finished product.
This is a top 5 dish for me, but only make it every 3 months or so.
A 4 pack of pork roasts is like $16 at Costco.

Almost done here. The roast has fallen apart. I let it simmer a bit longer to thicken up.

Nice dish. Finished on the stove top or in the oven? Lemon for the finish is an excellent twist.

Oven 2 hours then simmered on stove for another 20 min or so once the roast fell apart

Made it last week, sometimes sub chuck roast instead of pork. It makes fantastic poboys for left overs.

I like the pork sirloin because it has some dark meat. Great job.

I was confused there. Donald Link's pedigree is right for this kind of dish, but why was pot roast so light and looked closer to gumbo? Well, pot roast can be that light when it's not pot roast but smothered roast.

That bowl looks delicious. It's just how I like to eat rice and gravy-in a bowl with enough gravy such that it's almost soup with meat and rice. My mouth is watering. I have a pork roast in the freezer also and I bought it to make Link's recipe, but plans changed so I had to freeze it. Looking forward to this recipe.
