I chuckle every time he posts. The guy struts around here like he is up for another James Beard award and the only thing I've seen him talk about cooking is some dumb arse German pastries.

Everything else he posts is all about this stupid mantra about principles that he arbitrarily makes up off the top of his head.

I suppose my stupid opinion of cream as a base for a Louisiana based shrimp and grits rather than SHRIMP STOCK is not rooted in anything but silliness.

Whatever it is, it isn't anything "proper" or "principled" like you want to make it out to be.
