I'd drive to Bergeron's in Harrahan, but it's too damn far from the lower garden district. Surely there has to be a place closer?
TIA.
TIA.

Chris' Specialty Meat has them, but they aren't all that good.
Toups Meatery is the only other place I can think of. They are damn good. Not sure if you wanted a restaurant place though.

Grabbed some last Friday on my way home. They were garbage. I had never seen the guy cooking them before.

Those don’t look like good cracklings to me

He was a black guy late 20's/early 30's. Not sure of his pigment.
Some pieces were burned and the flavor was different. I'll go back again bc they were good in the past. I just can't stand wasting $10 on 1/2 lb of cracklin I can't eat.

AND, when the wife and I were in there last fall I asked about the price by the pound and the guy told me, "I'll give you the price by the 1/4 lb. and you can do the math."
He said $7.50 a 1/4 lb. and that works out to $30 a lb. Stupid prices for fried pork fat with a little meat on it.

No. I think he was too embarrassed to tell me $30 a lb.

I have never been in there (in my area)..something told it was going to be ridiculously expensive..
I don't get why cracklings are so expensive..

Most of what I saw in there was a good 20%+ over what you could get it elsewhere, but you have to consider its location being in the heart of Lakeview.
As for the price of cracklings, I too don't get it. I do know you lose a LOT of weight in the cooking process when they render off a lot of their fat because I do them at home using pork bellies I get from Costco. And like mentioned, they have to be tended to almost constantly to keep them stirred in the pot as they cook.

quote:labor intensive and a low yield. Needs ~3 lbs of pork belly to yield 1 lb cracklin, and pork bellies runs $3-4 /lb these days.

The going price should be and is ~$20/lb. Chris' is really high at $30/lb.

No store is paying $3-$4 a lb. for pork belly. That is what they are selling it for to customers. I'd bet they are only paying around $1.50-$2 a lb. wholesale.
