Let's do something for a little fun this week. Let's everyone make a meatloaf and post your version/creation under one specified thread. We can call it "Meatloaf Challenge!".

Let's see what y'all got.

I'll probably do this. I've been wanting to make a meat loaf anyway. Have only made a couple in my life and my kids recently informed me they've never had it. They also said it sounds gross and they wouldn't eat it. Think I'll make one and make them eat it...

Also, smoked meatloaf is tasty AF

My wife makes a damn fine meatloaf. I started the low carb diet this weekend. Wife and kids are out of town until Saturday, so I will make a meatloaf one evening this week and post pics.

I love this idea! However, I made meatloaf last week, and even though I'm a meatloaf fan, it's too soon to make again. I will enjoy reading about y'all's, though.

Love the idea of us all cooking a dish a week and comparing. Would be good if we could have the dish picked the week before to plan ahead.

I've made the one below a few times and it's very tasty and moist. I didn't do the tomato topping, though. I used the drippings to make somewhat of a brown gravy with additional onions and garlic. I have one of those meatloaf pans with the insert so you can pull out the meatloaf and the drippings are still in the loaf pan, which made it easy.
