Leftover pulled pork ideas

I smoke a pork butt regularly and I usually make several meals out of it, but now I am out of ideas.

In the past I have made breakfast burritos, enchiladas, quesadillas, tacos (really any mexican dish), but now I am looking for a new meal I can use the leftover for. Bonus points if it is something I can prep in advance and freeze.

The pork freezes well on its own, so if thats what I have to do then I'll do it, but I'd rather have a ready made meal I can pop in the oven.

Last time I had leftover pulled pork I did a grilled cheese with pork. It was awesome.

Use it on a homemade pizza with a good bbq sauce instead of pizza sauce

get some red bell peppers, cut the tops off and take seeds etc out. Fill with pork mixture, cheese, pork, cheese, and bake in oven.

never thought of homemade pizza either.

Casserole. Roughly,

Cut flour tortillas in half to line up with the edges of a rectangular dish. Leave some round for centers.
Mix about 12/14 ounces of cream cheese, the meat, can of rotel and small can of green chilies in a pan under low/medium heat until mixed.

Pour a bit of enchilada(you'll need two cans) sauce over layer of tortillas.

Spread the meat/cream cheese mixture. Layer a bit of shredded cheese.

Repeat these layers as often as possible. Bake at 350 for 20-35 minutes.

The grilled cheese idea is fantastic. You can do it up with some bacon and avocado.

I think the pulled pork chili is also a fantastic idea. I'd love to try that.

Stewed tomato sauce ragu with pappardelle or egg noddles. Maybe add some mushrooms to the sauce too.

Bottle of Chianti or other rich Italian red.

Could make ahead of time and freeze in the sauce if desired, but would leave out the shrooms if freezing.

Pulled pork nachos are awesome. Drizzle with bbq sauce and melted velveeta. Garnish with jalapeños and cilantro.
