Left over boudin

I have a bit of left over boudin from over the weekend. I am wanting to somthing beside a stuff chicken, so I'm looking for some ideas. Thanks

Puff pastry dough, boudin, shredded pepper jack. Make hand pies. Brush with egg wash and bake.

Dip in microwaved pepper jelly.

Remove the casings and make patties.

Sautee in butter until the outsides are crispy. Top with a fresh tomato slice, poached egg and some Hollandaise sauce.

Boudin Eggs Benedict.

I made it for breakfast yesterday morning.

Make a grits cheese boudin casserole... Big hit with some yankee friends that visited..

It freezes okay, so if you like to use it as an omelette filling, you can squish it out of the casing and freeze in small portions for later breakfasts.

Wrap in a flour tortilla with or without cheese. Brown in a skillet

Get you a big can of Blue Runner white beans. Break the casing and dump in the pot with the beans.

Scramble it in with some eggs. Wrap in flour tortilla with some shredded cheese and fresh salsa
