Left eggs on the counter overnight

Got home from the store and the eggs didn’t make it into the fridge. House is kept pretty cool- 65 or less during the day. I’m pretty sure they’re fine, but just wanted a 2nd opinion from ‘the experts’

They're fine for most cooking applications with the exception of any requiring a runny yolk.

If your intended purpose for the eggs is to use them in baked goods or hard boiled, then don't fret.

I wouldn't recommend soft poaching or serving them sunny side up.

They are fine.

But if you are worried about it just toss them. A dozen eggs cost like $1.50

Were the eggs damp? Like, had they formed condensation on the shell? If so, toss them.

I didn’t notice any condensation, and I do plan on adding them to casseroles, etc. I’ll be sure to crack them into a separate bowl before I add them to make sure they don’t smell bad or anything.

Why take the risk when you get another dozen easily at a low cost? If I have to ask the question and I'm going to be cooking for someone other than just myself, I'd be getting fresh eggs.

I’d use them in any cooked application, without hesitation. Might not eat them raw, a la rocky, but in cooked stuff? For sure.

If all else fails, make pickled eggs with them. I do this with a couple dozen small eggs a few times a year. Boil the eggs and when done rinse them with cold water and crack the shells as this makes them peel easier.

I'll add sliced onion, garlic, mustard seed and some cut up habanero peppers to the jar with the eggs, half fill it with vinegar and top off with water. Pour the liquid into a saucepan, add a generous amount of salt, bring it to a boil and pour over the boiled eggs.

Then seal the jars and put them in a hot water bath for 15 minutes, remove and let cool and they will seal on your countertop. Then store until you want to use them. No need to refrigerate if they seal properly.

The United states is like the only country to refrigerate eggs. You'll be fine.

I don’t think eggs actually need to be refrigerated. Not sure if they had been previously refrigerated though.

I’m not sure when or why the industry decided they needed to be refrigerated, but they didn’t used to from my understanding

fry them up! You will either have fried eggs or fried chicken.

US eggs are washed, which removes the natural protective coating that keeps eggs from spoiling. Thus, the refrigeration. All over Europe, eggs are sold un refrigerated, sitting on the shelves next to the bread, etc.
