What's the best kitchen knife set with a 350$ spending limit? Won't be everyday use but will be used for cutting up vegetables, sausage, and different things around the kitchen....

I got a set of wusthof as a wedding gift 5 years ago, use the chef knife daily and have yet sharpen it.
I’m sure there are better knives than wusthof out there but this set has done me well.
No complaints with laguiole steak knives as well

$350 budget?
That price, I'd buy a good Chef's knife, experiment with them. I like Japanese, they're lighter and feel right in my hand. Some prefer heavier brands, like a Wusthof. Can't go wrong, it's subjective.
Then I'd make sure I had a good honing rod and cutting board. That's going to make your utility knife better. That's also probably 2/3s of your budget, I'm guessing.
As I'm adding on from there I'd do a paring and boning knife, and a bread knife. But you can get all of those at your local restaurant supply store very affordably.

I may be wrong, but that's a pretty low budget for a life long knife set. Buy once, cry once!
Or buy two mediocre sets so you get one set if it doesn't work out. Hopefully it will never get to that

Victorinox chef knife, paring knife, and set of steak knives. They have nice looking wooden handle options.

I have a few Shuns and love them. I would imagine you can get a set around that price.

Get a set of steak knives you like. Don’t do it with your other knives. Go to a restaurant store and hold them if you’re going to chop a lot. None of mine are from a set.

Cutco. Don’t buy a cheap set. If you have to add a couple every few years go that route. FYI their table knives are also badass.

We got a similar set 11 years ago. They are still going strong. I just sharpen them when needed. They do everything I need except for filleting or deboning. I have my hunting knives for that.
Chicago cutlery makes a decent “starter set” as well. Mine got retired to the camp. They are 20 years old and still cutting.

Cutco knives are solid. You will not get many knives for $350, though. They have a great warranty, and they will sharpen them for free. I like the feel and weight of them. They are different from most.
ETA: Most people buy these sets from a college kid who lives down the street. Cutco now sells at Costco and through their website.
