A can opener that cleanly removes the lid without dipping the cut portion into the contents of the can.

A wife who stays out of the kitchen while I cook.

After years of suffering through the Seal a Meal version, I finally sprung for a JVR, what a game changer. Thanks to NOLAGT for the recommendation. I seal up bags of red beans, gumbo, venison stew and such when I make it (no extra effort to make a bigger pot) and just drop the pouch in a pot of boiling water, dinner ready in 20 minutes.
Runner up is the 10 function countertop oven/air fryer my boys got me a few years ago. Only time the big oven gets used is if I’m doing a couple of pounds of bacon.

We have a short one in front of the stove, and a long one that’s in front of the sink and prep area.
I take them for granted until the day the maid comes. They are heavy, so I roll them up and put them away so she can clean the kitchen floors without wrestling with them.
If I start working in the kitchen afterward, it takes about 2 minutes before my back and feet remind me that I have to get the mats out.

I’ve thought about the oil sprayer but I measure everything I eat and count macros
I usually do a tablespoon or two on my veggies. How does it measure out?

incredibly okra is the best thing I’ve eaten out of the freeze drier it’s amazing
we have a harvest right medium machine. It fits on the countertop and runs off a standard 110v/20A outlet. They go on sale on the website occasionally (probably Black Friday coming up soon), ship quickly and come with a bunch of accessories you’ll use.
ours is in the utility/laundry room. When the pump is running it’s about as loud as a window unit. Put it next to a sink and you can just drop the drain hose in there and leave it.
highest recommendation. We run ours 2-3 times a week. Vegetables and herbs are the easiest and most useful end product. If you have dogs, freeze dried hearts and livers are great for treats

I would probably be dead before i recoup my investment in that.

no, its not going to "pay for itself". its a luxury item but a very good one
