What are some new things i can cook, and also some cool new gadgets to buy?

I've smoked brisket, pork shoulder, plate ribs, baby backs, chicken, jerky. I've cooked steak, burgers, wings, sausage, pizza, etc... I've even done root vegetable hash browns, and other veggies. I have the "Project Smoke" cookbook, and there are many great ideas, but i was wondering if there are some things you smoke/grill/cook on your ceramic cooker that comes out great.

In addition, I'm looking for some new gadgets for the grill. I have the Classic Joe II. It has the divide and conquer system (split grates). I have the stainless and cast iron grates. Pizza stone, deflector plates, grate grabber, grill brushes, billy bar, and i just ordered a clamp on grill light. Wondering if there are any other cool tools out there some of you may have. Thinking of getting a griddle and the grill extender for the Joe.

ETA: I also own a looftlighter and the weber igrill.

I've briefly looked at those. Kinda seems like cheating. Not saying i wouldnt' use it if i had it. But i won't be forking over $350 for one.

I'll ask the question in here since it seems somewhat related, what are you all using to keep your drip pan off the deflector plate?

The Kamado Joe has that attachment looks like a cross to hold a drip pan elevated

Get a good wok too.. you place it in that same attachment I mentioned for drip pan.

you'll get over that part, i promise. especially if you are cooking a $200 brisket for 14+ hours

and i'll also second the kick ash basket.


I threw away my stainless grates after i got cast iron, but picked up a Grill Grate grate for my mini max. they are awesome for searing.

also, it never hurts to have a multi-tier grate if you are doing a lot of wings, multiple butts etc. see photo:

I don't use a drip pan. I'll either let it ride and scrape off all the gunk before the next smoke, or wrap the top of the deflector plates with tin foil to not worry about the mess.

I thought that was to put cast iron pots in.

^^ Same here. used to use a drip tray but now i don't mess with it. whenever it gets real gunky, i'll flip it over and let the fire burn it off.

I use throwaway aluminum pans. Size depending on what I am cooking. Also, I roll up aluminum foil to act as a spacer between the two. That way the drippings wont burn as easily.

It has many uses.

You can put cast iron in
Works as a wok holder
You can put pizza stones on it.
Use to raise anything above heat deflector.

I do too. Right now I've been using 4 metal nuts I had laying around as spacers. I guess I'll just keep riding with those.

I have a pitmaster iq130 as well that works great. I have gone 18 hours with it at 245 without adding any coal and no spikes.


I will add. I have the bluetooth one. I wouldnt like it if I didnt have the app to control everything. The standard interface is difficult to work.

I have never had anything sear a steak as nice as this thing. Just a big old thick slab of Stainless steel.
