I expected it to be jiggly, weird, and at least a little revolting. I was mostly correct in my assessment. I will say the flavor itself was actually pleasant, a little bit spicy but not overpowering, and the cool and crunchy celery was a nice touch… but I can’t get past the creamy yet jellied consistency. It’s not quite solid like a jello jiggler, it’s softer and has less of a bite to it.

What a waste of ingredients. I don't get why someone would waste time & energy making antique recipes that are obviously NOT going to produce a delicious result. Tastes change, fashion moves on. Did anyone reading that terrible recipe think it would yield something delicious?

maybe that you've ever seen, but i have a copy of the most disgusting recipe ever written. by coincidence, also a gelatin salad(?). it contains sweetened lemon jello, shredded fresh cabbage, canned sauerkraut, hot sauce, a mix of chicken broth and 7-up soda (to liquify the jello), grated onion.
found that gem in a ladies auxiliary cookbook for some church in Franklin, LA...proof that not everyone in south LA knows how to cook or eat.

My grand mere used to make chicken cheese. It was made with a whole chicken, simmered forever, so that the resulting stock would jelly like hogsheads cheese does. It was pretty bland, as I recall. Not as spicy or full of seasonings.
