Just Got a CrockPot - Need Recipes

So I snagged a crock pot for my parents house and I'm already obsessed with. I did a small pork shoulder in bbq sauce on low for 7 hrs yesterday and it turned out fantastic.

Any other good, simple recipes to try? Any classic favorites?

Easiest crock pot recipe in the world: Chicken thighs + jar of salsa + packet of taco seasoning. Low for 6-8 hours. Shred and use for chicken tacos, nachos, etc.

Bag of meatballs
Green pepper
Red pepper
Yellow onion
Can of pineapple
Jar of sweet and sour sauce
Serve over white rice

Corned beef brisket
Potato
Carrot
Onion
Cook for 7-8 hours...then add cabbage and cook until tender

Alternate layers of tortillas, cooked beef/chicken, gp/onion, cheese (cheddar/monterey jack), beans, salsa...heat through and you have crockpot enchiladas

I'm doing this one overnight tonight. Coworker recommended this.

Would highly recommend the crockpot cookbook from Americas Test Kitchen. They have some very good recipes and lots of tips and tricks for the crock pot.

I think the crock pot was invented for red beans.
One bag of Camelia's red kidneys, soak over night. Drain beans. Add 1 onion, 1 bell pepper, minced garlic, 1-1.5 lbs smoked sausage or Andouille, Tony's, black pepper, dash of chili powder, dash of paprika, 2 cups fresh water. 8 hours on low. When I get home from work I add 1 big can of blue runners to this. Cook rice and you are good to go.

Chicken and Dumplings in the crock pot is my favorite. Queso with ground beef or venison added is up there as well.

Cut baby back ribs into 3-4 rib portions. Season as you normally would and contrary to what I thought was always necessary, plop them into the cooker with no liquid (give it a spray with some oil first though). Couldn't be easier.

I've only tried the creamy chicken taco recipe so far, but it was pretty good (next time I'll add a packet of taco seasoning to the pot for a little more flavor)

Do you brown the meats first?

I made a bunch of America's Test Kitchen/Cook's Country chili, with a few changes, over the holidays for the freezer as I've been scoring a good bit of good homemade tamales lately. Good stuff.

Pioneer Woman's Drip Roast can be made in the crock pot. Lots more juices that way. Makes fine sandwiches or could be over pasta or even rice. I don't make the one with the tomatoes. The one I like has the peppers and, no onions, though I brown some for it sometimes.

yup, here is the email I sent this morning, I will also note I see a lot of recipes that call for more peppers than what I use which I find strange bc the chili I make is extremely spicy and I am the type of person that loves spicy things, regardless it is very hard to screw up:

2 lbs. ground venison
1/2 lb. bacon
1 onion chopped
1 Bell Pepper de seeded and chopped fine
2-3 Jalapenos de seeded and chopped fine
1 serrano de seeded and chopped fine
1-2 cloves garlic
Salt to taste 1 TSp
Cayenne powder 1 Tsp
Chili Powder 2- 3 TSPs
Cumin 1-2 TSps
16 oz. can petite diced tomatoes (include liquid)
1 small can tomato paste
12 oz. bottle beer - typically use Dos Equis Amber
1-2 cups beef broth, add more if needed to get desired consistency
1 Hershey bar

Directions: Chop bacon, cook with peppers and onions. Mix in some chopped garlic. Add to pot when done.

Cook ground meat in bacon fat, drain. Add to pot when done.

Add remaining ingredients into large pot, simmer for as long as you can hold out. I aim for 4-6 hours.

Some people add beans to chili, just depends on your preference.

This is a post of mine from earlier. It has to be one of the easiest recipes ever - especially for how good it turns out.

My mom makes the best chuck roast with simply a roast and a pack of Liptons Onion Soup Mix and a little water.

Just put the roast in, sprinkle the soup mix on top, and pour 1/2 a can of water over the top. Cook on low for 8 hours.

It's awesome!
