Jambalaya Sandwich

While this might be my favorite thing on earth to eat, I want to make it better by creating a gravy dipping sauce to go with it. Anyone ever done anything like this? Cheesecake Bistro used to make a Cajun turkey gravy that was awesome and I had a recipe but lost it.

I always thought a jambalaya poboy would be awesome. After you brown everything and add your seasoning right before you add water, slap that shite on some bread.

My daughter loves to make (actually for me to make for her) jambalaya or red beans and rice sandwiches. Glad to know she's with good company.

Jambalaya omelet is killer.
Last year at BBQ event I hosted one of the guys from Tennessee made a fatty for breakfast with a jambalaya I made the night before.

Tonight we are making quesadillas from leftover jambalaya. That's another favorite.

I do jambalaya cakes for breakfast after I make one.

This would be perfect:
Popeye's Famous Cajun Gravy
1 1/2 Tbs vegetable oil
2 chicken gizzards
2 1/2 Tbs minced green bell peppers
1/4 cup ground beef
1/4 cup ground tasso or andouille
2 cups water
14 oz beef broth or chicken broth
2 Tbs cornstarch
1 Tbs flour
2 tsp milk
2 tsp distilled white vinegar
1 tsp sugar
1 tsp salt
1/2 tsp fresh coarse ground black pepper
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp dried parsley flakes
1. Heat 1 tablespoon vegetable oil in a large saucepan. Saute chicken gizzard in the oil for 4 to 5 minutes until cooked. Remove gizzard from the pan and finely mince.
2. Add bell pepper to the saucepan and saute it for 1 minute. Add the ground beef and ground pork to the pan and cook it until it's brown. Use a potato masher to smash meat into tiny pieces as it browns.
3. Add water and beef broth to the pan. Immediately whisk in cornstarch and flour. Add remaining ingredients and bring the mixture to a boil. Reduce heat and simmer gravy for 30 to 35 minutes or until thick.
