Kind of in a hurry, don’t have time to use the calculator or to look it up, 20 pounds of dry rice, 20 pounds of meat, etc. can I get about 200 bowls of jambalaya from that?

I'm interested in the circumstances that puts someone in such a rush while cooking Jambalaya for 200 people.

A friend of mine was lined up to cook it for a group and he got sick. So they asked me at the last second to do it for them. I didn’t have an opportunity to plan much.

No, I think you are right. my recipe is a little less than a 2 to 1 ratio of lbs of meat to lbs of rice.

Yeah, I'm about 10-12lbs of meat for 5lbs of rice.
-Chicken Thighs
-Chicken Breast
-Pork Loin
-Sausage

per pound of rice will feed
6 hungry men a full size meal
7-8 mixed men women and children
10 small banquet size portions when other items are available

definitely need to up your meat , i like a rice heavy jambalaya and would at least double the weight of rice with total meat weight

Correct, needs to be 20 lbs meat, and rule of thumb is 6-7 servings per pound of rice, so that will only yield 120-140 servings.

Doing a 7lb rice for a party this weekend. Will feed 50. But I cook mine 3:1 meat to rice. Also frying fish so it will be plenty.
