People who hate the wedge salad hate America.

Wedge with blue cheese, bacon, cherry or Creole tomatoes and red onion is one of my all time favorite things to eat if it is housemade high quality blue cheese dressing and the tomatoes are fresh.

Wedge salads are great. It’s just a way to get a crazy amount of good bleu cheese dressing and bacon and call it a salad.

I don't know about paying $15 for one at a restaurant, but in the summer I make them as a side every time I grill steaks.

1/2 head of iceburg lettuce - $.50
some blue cheese - $.50
tomato - free from garden
1/4 red onion - $.25
couple slices of bacon - $.50

total cost for 2 = $1.75

ribeye, loaded baked potato and a wedge salad - it's a perfect combination

I think one of the reasons the Wedge gets a lot of hate is because it’s one of the few dishes where the markup is obvious.

But ask yourself if you are equally outraged by the price of a glass of wine or a whole bottle. What about a corking fee when you bring a bottle?

What about the markup of a good pour of whiskey? I can get about 17 ounce and a half pours from a bottle of whiskey. With a good $50 bottle, that’s about $3 per pour. But if I order it at a restaurant, I’ll get charged about $12-15.

If you are interested, Call ahead and drop by the house. I'll make you one with the wife's (MHNBPF) Thousand island dressing for $3.00. We don't do blue cheese for $3.00, but I might for $4.00, depending on current market price for good blue cheese.

A good wedge with quality bleu cheese, crisp and fresh premium lettuce and tomato topped with diced pork belly or thick cut bacon is killer before a rare filet.
