I'm guessing this is Cajun rice and gravy?

Cajun cooking gravy
Someone in th OB garden thread gave me this guy. He does a bunch of garden videos and a few cooking videos. He's pretty matter of fact.
And Paul is ready for supper.

Cooking a chuck roast like that is one of the first things I learned to cook. Grew up between Eunice and Opelousas. Only difference is we usually cut it up first or left it whole through the process. Key to it was browning for a good long while and getting that good dark brown gravy.

Left handed people drive me crazy.
I've made a gravy that way (cut it up first.) No flour. It takes longer, but real nice.

Glad I wasn't the only one wondering that. The best crust and brown in the pot comes from that layer of seasoning.

No flour in a Cajun gravy. Grew up eating rice and gravy twice a week south of Kaplan

that's exactly how Cajuns cook. pretty much everything they cook is like that. ducks, squirrels, pork, hen, etc........
however, the only thing I do differently is:
season meat first
never use tony's

I don't buy it already marinated because I want the blood. and, the reason I cut it up before is so moor "red" can touch the bottom of my magnalite at all times.

I verrrrry lightly dust with flour. Not enough to create a thick gravy or anything.. But just enough to create a brown layer without overcooking the meat. Similar to how you dust short ribs or something before braising.

I have never seen anyone cook like that.
Roast wasnt stuffed with garlic, no red pepper, seasoning after the roast is in the pot, wtf?
I couldnt tell when exactly they cut that roast up, im hoping it was late in the cooking process. I have seen some people cut the roast into smaller chunks but never into small slices like that.

What is the problem with seasoning your roast once it starts cooking? Keep in mind I'm from Missouri.Be nice.
