Murder Point oysters, steak tartar, pig ear, conch...IDK, Emeril's really does fit the bill but that wasn't cool enough.

That does change the equation.
Peche has been mentioned a few times and while Donald Link is one of my favorite chefs I would probably go for Cochon before Peche for a casual but impressive meal. I think the service is better at Cochon and I find the room more comfortable.

Peche is top notch in its category and always recommend it for a meal to out of towners, but commanders gets the nod without question for a celebratory meal to experience Nola cuisine.
You can travel the world, visit the best restaurants, and be hard pressed to find better or more hospitable service. The food might not be the absolute best in Nola, but it's damn good.
Coquette is my favorite restaurant in Nola, but it wouldn't be in my top 5 restaurants for visitors either.

No love for GW Finn's here on this board? Not quite jeans and a polo type atmosphere, but no jacket required........ And then you can just walk on out into the FQ.

If you want them to be impressed with the food and atmosphere, as well as have a memorable experience, then I suppose that August or Commander's would be the choice (a little step above jeans and polo but they wouldn't be turned away . . . certainly don't require coat and tie).
If you want to take to a really good local restaurant with topnotch food, imo, I would suggest in no particular order:
Lilette
Coquette
La Petite Grocery
Peche
Herbsaint
Compere Lapin
there are some others

Galatoire's to me is the quintessential New Orleans restaurant. Commander's would be my second choice.

Coquette is a ridiculously good restaurant. It's just geared toward people who eat very nice food often and can appreciate it. It may be overly stuffy to guys who generally don't eat that well. It's seriously good though. From their website...

I suppose I should put my two cents in here...
When I have out of towners, I almost always take them to Jacques-Imo's. I tends to be a crowd pleaser, and they have lots of interesting dishes.
But, I think I can do better since I only have one shot, and, truthfully, I've had everything there is to eat at J-I, and would like to try something new.
So far, the general consensus seems to be:
Commander’s
August
Peche
Compere Lapin
Also going to consider Cochon or GW Finns or maybe Emeril's.

I agree with Lester. I'm not sure you'll appreciate the other suggestions. May not be up your alley.
