Viet style ga nuong, which is grilled chicken marinated in a simple marinade:
2 T lime juice
1/2 tsp salt
1/2 tsp sugar
2 tsp ground black pepper
2 T Vietnamese fish sauce
Combine all that, don't skimp on the black pepper. Pour over some boneless skinless chicken & let sit at room temp for about 30-45 minutes. Grill until done as you like it. Slice it up & serve in lettuce wraps, atop a salad, wrapped in rice papers, or in a sandwich.

Of course not, unless I'm making stir fry. A bigger piece is harder to overcook, and it's much nicer to actually use a knife and fork than to have foodservice style chunks.
If you're looking for seriously quick n easy, try the Frontera Grill/Rick Bayless sauce pouches: there are several flavors suitable for chicken. I like the red chile mole sauce. LINK

Cut the chicken breasts into strips, and marinade in your favorite mexican spices. Grill with onions and bell peppers, put on tortilla. Quick, easy, healthy, cheap. I do it all the time. If you want all the toppings you can add that too, but if you are looking for healthy then I would skip out on most of them.

cook the chicken, then cut up, put in a lettuce wrap, add a pineapple salsa(whole food has a simple recipe). Make a guac to add on top if you desire

Make a simple blackened seasoning, marinate, and then blacken them on a cast iron, throw in it the oven on 300 for a few minutes. Done.

Use thighs instead of breasts, there is a very negligible difference in the nutrients and the taste is EXPONENTIALLY better.
