To many 'refined' beer drinkers on here. I like Coors original and Shock Top. But since I dont drink every microbrew out there, apparently I do not know anything about beer.

The skunkiness in heinekan is from the bottle, mostly. Green bottles let light in. When you let light into a beer it goes bad, and becomes skunky.

Looks real similar to the recipe I used for my strawberry saison. I don't have any experience with that yeast, so not sure about that mash temp. 147 is the lowest of the low. I shoot for 149ish for my farmhouses. I wouldn't think 147 would be a problem, I just I don't have experience going that low.
Another thing I've found that has helped my saisons is bumping up the Calcium Sulfate to around 175 ppm. Really accentuates the dryness. I didn't do it on my strawberry mango saison and wish I had. Not sure what your water is, but I know in New Orleans I end up having to add about 2 grams of gypsum to the boil.

You don't, and if you meet someone whose only exposure to steak is a texmex fajita, feel free to tell them that they don't know anything about steak. Your exposure to beer is the rough equivalent.

Jamil Z. recipe and his suggested mash temp. It's frightenly low but if it works it should make for a dryer beer.
I just used 5.2 for the first time on this blonde I'm brewing. I don't mess with my water any more than that and this is just a test batch to see how the 5.2 does. So far I hit my desired gravities so that's a good thing.

I drink any type of micro I can get and have had hundreds of different beers and I still feel like I don't know much about beer.
Just drink what you like. I'm going to keep searching for my next favorite beer.
