Always a great flavor, but unless you sear the shite out of it, it gives off way too much grease.

Funny thing: I don't like it but my children always whine about how "spicy" good sausage is so I sometimes buy Conecuh for their delicate palates.

You know, I’ve never made the connection before. But I stopped making gumbo a few years ago because every time I made it, my stomach would hurt after eating it. It was always too fatty. I figured it was the roux.

I usually use conecuh sausage because I don’t have much andouille available unless I go to Whole Foods. I need to try another gumbo without the conecuh.

I think Louisiana people kinda shite on Conecuh because it’s made in Alabama. It’s good sausage for the grill, for sausage dogs, and fantastic split and fried in a skillet. However, I agree that it is awful for gumbo, beans and things of that nature. If you put conecuh in a pot of something and take a bite, your first thought is this tastes like conecuh. It dominates. Plus it is greasy as shite.

I prefer Jacob's andouille in my gumbo also but my wife doesn't care for andouille sausage. She thinks it has too strong a flavor for her liking. So I am thinking about using smoked sausage next time I make gumbo. Any recommendations? Not using Manda's or Savoie's or anything like that. Maybe from a specialty meat market?

I have to use Conecuh sometimes because I live in Tennessee, but I do not like using it. Yeah, it works in a pinch, but it's not the same - at all. Not even close.

It’s a Bama thing. I’ve tried for 11 years here to like it but Louisiana just has much better options. Especially with Rouses here now, I don’t have to ever default to Conecuh.

I like some conecuh for breakfast and grilling but no universe exist where it is acceptable for gumbo

Conecuh is classified as a breakfast sausage in grocery sales reports. They use breakfast sausage seasoning to make smoked sausage.

Louisiana smoked sausage does not use breakfast sausage seasoning.

Conecuh is not a Louisiana style of sausage. I’m not saying it’s bad, I’m saying it’s a totally different flavor and not really comparable. If you like it, great.

Personally, I want Louisiana smoked sausage because it’s not breakfast sausage and because I support the Louisiana companies.
