I am looking for a good chili recipe.

I have been wanting some homemade chili from scratch. Do any of you have a good recipe?
I am good with any style. Beans/meat/etc...

I've had some good luck hitting up the websites of the chili cookoffs held in Terlingua, TX. They're pretty big events and they post a good number of the winning recipes on their websites if you poke around them a bit. At one time I think the rule was winners had to share the recipes, but I don't know if that is still part of the deal.

For a bowl o red, real chili:
Toast 8-10 dry chiles (I use guajillo, chipotle, and New Mexico usually) then soak them in warm water until rehydrated. Cut open, remove seeds, place in a blender/food processor with cumin, black pepper, and salt and add the soaking water as needed to form a chile paste.
Heat lard, cube a chuck roast, sear, remove and place aside.
Add more lard if needed, sauté diced onion and minced garlic.
Add 2 cups beef stock and some water and deglaze, then mix in a couple tablespoons of masa harina along with the chile paste.
Add meat and simmer 2 hours. Add a couple tablespoons brown sugar and vinegar to taste. Simmer 10-15 more. Cut the heat and sit for 30ish and let the meat soak up the sauce.
Reheat if needed and serve with lime and crema.

It’s always gumbo (or chili) weather at my house. It’s not like I’m eating it out in the sun. I’m in the A/C.

Well, you know how I feel! It's not like I give up hot foods because it's hot outside. I had chili not long ago when I scored some fresh homemade tamales. It was mighty good.

For starters, chili don’t have beans, that’s like saying gumbo with noodles.
Secondly, it don’t matter if it’s 100° outside, chili and gumbo will work anytime.
That bowl ^^^^ with the sour cream looks damn good.

Yeah I saw the crema part after I posted, my wife and kids use sour cream and I got carried away.

Get a pack of 2 Alarm chili kit. Brown your ground meat really good, take it out and brown an onion, add the meat back and cook according to package directions. The other thing I do different is use 1 size up on whatever size tomato sauce it calls for and double the water.
