What's the best way to reheat boudin?

If you boil it, the rice absorbs the water, swells up and ruins it; baking it drys it out (unless you're from Acadia parish and your in to that kind of dryness)

How do these meat markets heat theirs up everyday?

They use a food warmer to steam and keep the boudin Hot.

A rice cooker, using it as a steamer.

What? It’s in a casing for a reason...not that I would boil it.

Rub it down with oil and bake it until crisp.

I've had no issues with the taste when I take it out the freezer, let it thaw and then heat it in the microwave for 30 seconds at full power, let it rest a few seconds and hit it again for 30 seconds so it's nice and hot and won't explode in the microwave.

I usually buy a big batch of it when up in Marksville, bring it home and freeze it for later use.

or defrost it and throw on the grill. even shitty boudin is good on the pit.

If I'm not in a hurry I put a colander in a pot of boiling water and let it steam. If I am in a hurry I cut the boudin into bite size pieces, lay them flat on a plate, cover it with a wet paper towel and heat it in the microwave.

I've realized throughout my years that people just dont know how to use a microwave... people just set it to 2 min and ruin it. if you heat in 30 second increments.. and let sit for 20 second in between it is a whole different device.

Put a little water in the rice cooker. If you have the insert that will keep the boudin off of the actual bottom, use that. Throw boudin in. Turn rice cooker on. Only takes a few minutes.

You must be getting crappy boudin. I've never had "dry" boudin, no matter the way it has been cooked.

I'll either bake with olive oil rubbed on or grill with indirect heat...essentially baking it.

Or run it at 30-40% power for 4x as long

If I'm not grilling it, I put it in a microwave safe dish, spritz it with some water, cover in plastic wrap, punch a few holes in the wrap and microwave in short intervals at about 50% power. Works well every time. You can steam on the stovetop also. I've never had an issue with warming it in the oven either.

This. I like me some crisp casing. Also off the grill low and slow.
Thanks now I’m gonna have to a make a run to Billeaud's in Broussard.
That’s my favorite. They have all kind of good stuff. Now I need some cracklings. Damit.
See what you started.

I like it grilled. If I have time I throw a frozen bag of links in the sous vide and it comes out perfect.

yes. it's also not bad if you put in the oven for a little while. crispy's up the skin a bit like the grill does.
