How to cook prime rib

One thing I’ve never eaten or cooked is prime rib. Teach me your ways

Did one today for the first time. I did a combo of a few recipes and it came out pretty damn good.
It’s called a “No Look” method, meaning under no circumstances do you open the oven until it’s done.
The night before I made a compound butter with herbs de Provence, rubbed the entire prime rib down with that, put in the fridge overnight. Next morning pulled it out the fridge, let sit for 3-4 hrs to get back to room temp. Generously seasoned with salt and pepper. Set oven temp to 500. Once the oven is ready, insert meat and put a timer for 5 mins for every pound. Once the timer goes off, lower oven to lowest temp possible (usually 170), let sit for 2 hrs. DONT OPEN THE OVEN....ever
Let rest for 10 mins after cooking.

Smoke until 120-125, then sear outside. Rest, slice, eat!

Any interior pics? How was the doneness? Any Gray between the pink and outside?

Picture doesn’t do it justice. It was damn near a perfect MR. Without having a smoker, it comes out pretty damn good.

Reverse sear.......
Heavily salt prime rib night before
Get a good meat thermometer
Smoke or do in oven at 225 degrees until it reaches 125 internal temp.....take and rest for 30 mins
Sear on grill on each side over high heat for a few minutes and serve immediately
Perfect every time

That method is fool proof, tried and true. Hard to mess up and is consistently good.

That one looks great.
I’ve done the Alton Brown one per this board’s rec, once as a standing rib roast and once with a ribeye toast. Both times came out excellent. I’ll see if I can upload pics later.

Ive used the 500 degree don't open the oven method for over 10 years. It works. The key is to rub 24 to 48 hours before you cook. use your normal rub or just salt and pepper but let it sit in the frige for a day or two prior to cooking. Also, let the rib get to room temp before putting in the oven. You will be very confident after you do one. Good luck

This method definitely works, but leads to more gray, well done meat on the outside and less medium rare in the center. This is where the reverse sear excels.

This helps you get a great crust! 100g agree.

This is a myth and doesn't actually give any noticeable benefit.

next time you think it is at room temp because you left out a few hours, probe it with a meat thermometer...it would take 2 days sitting on you counter top to get the internal temp to room temp

I did not. I don’t know if you’re being sarcastic or not but I watched a documentary where someone did this and everyone raved over it. I think it was Mayo

Cut bones off and season all sides, then tie bones back on and smear softened butter on all sides, bones down on a roasting rack and put in 200 degree oven till 121, take out crank oven as high as you can and put back in for 15minutes , let it rest, cut bones off and pass them as appetizers, while you mix some beef stock with the drippings for an au jus as roast rests for 15 minutes, then slice and make sure the cook gets the very middle piece, have a skillet heated with a touch of butter for anyone who wants it medium or more
