Well, yeah. I have a buddy who does the same thing. I've been having this argument for 25 years with him and never let up when he cooks white beans and could have cooked red beans. I fear we may never agree on this one.

I just don't get why one would want white beans when they could have red, but to each his own.

I did not get crap about white beans, and I love them, I got crap about them being soupy.

I love beans, do red, white, black eyed, black, etc.

I make red bean soup sometimes and I really like the flavor of the broth.

Got three pounds on right now(I did not see this post). I put mine to soak last night and they did so for about 12 hours. I never try to rush cooking beans as sometimes you get some that are fresher than others. Old dry beans take much longer to cook though.

I grew up pretty poor and can't tell you how many times I ate red gravy with hot dogs cut up in it instead of some nice beef/pork meatballs or Italian sausage.

Same here. RB&R is probably the first thing I ever cooked on my own. Now days I consider myself a pretty decent cook and red beans is how it all started.

Early post from me but I soak my beans over night and don’t do 45 minutes:

I usually do it this way:

Soak beans for at least 3 hours

Cut sausage up (your choice, if going to the store I get Vernon)

Put IP on saute mode

Brown sausage, then pull

I make a quick roux

Add seasoning and cook down

Turn off saute mode

Add beans, and water about 1/2 inch above beans

Add sausage, and a ham hock

Add better than bouillon

Put on bean mode and change time to 25 minutes

Done

12 hrs in a crockpot. A can of blue runners at about 10 hrs and enjoy
