Anyone have any good ways to make red beans with sausage in the Instant Pot? I'm working nights this week and don't have all day to cook my bean. I figured I'd use the saute for the Trinity, then add the beans with my ham hocks.
I just don't know how much water and timing I should be using. Any suggestions and tips?

Pour enough water to just cover the beans and cook on manual high for 26 minutes and quick release.

Its much easier to use the slow cook function. Just throw it all in..7 cups of water. 6 hours. It will keep it warm for you.

I usually do it this way:

Soak beans for at least 3 hours

Cut sausage up (your choice, if going to the store I get Vernon)

Put IP on saute mode

Brown sausage, then pull

I make a quick roux

Add seasoning and cook down

Turn off saute mode

Add beans, and water about 1/2 inch above beans

Add sausage, and a ham hock

Add better than bouillon

Put on bean mode and change time to 45 minutes

Done

I just throw everything in the pot, cover with barely enough water, blast it for half and hour and call it a day. Comes out great. Cut that time in half easily if you want to use canned red beans.

I’ve tried cooking beans quickly in an instant pot and find that they come out bland. Like the sauce around them is good but the actual beans aren’t cooking in it long enough to meld together. Super tender though.

Presoak the beans in some ham stock.

A roux for red beans? Next you'll be telling me there's roux for jambalaya!

Are there some kind of rules here that I am unaware of? I use a trinity (seasoning) in my beans. So, quick roux, just get it brown, add seasoning and cook down.

Don't knock it till ya try it.

My beans, all kinds, are da bomb and even old school bean eaters jump up and down for MOR when I make them.

Sounds like solid recipe!
Ever use pickled pork in addition to sausage?
I picked that up from inlaws NOLA style.

No. I try to goto LaPlace for my sausage but nothing wrong with pickled pork. I use a smoked ham hock and then pull the meat off afterwards and throw it into the beans.

I do sometimes cut up a few strips of bacon and fry that up
