How does Sushi Masa turn a profit?

With the all you can eat dinner option that covers practically their entire menu, and their all you can eat lunch as well...how does this place stay open? Does anybody have any insight on what their monthly food cost vs gross sales are?

The place churns out some excellent sushi, and it would be on my rotation of sushi joints even if it weren't all you can eat.

Most people dont go in there and gorge themselves like its their last meal.

Isnt it also the same owner as Ichiban? I imagine between the two places, they dont as waste much food as if they were both stand alone restaurants. Might help with the costs. I dunno

Its all you can eat, but if you order a roll and dont eat it, they will charge you for it. Or at least they used to. I haven't been there in a while

All you can eat buffet or no buffet, your stomach has a maximum capacity. Adjust margin to the average consumption.

Ate lunch there on Sunday at the request of some coworkers. It was meh. The rolls were ok but nothing special. Very few raw options available on the "unlimited" lunch menu ($14.95), all of them were either filled or topped with spicy tuna. The tuna tataki was literally 5 thin slices of tuna. Not that I was expecting more. It was ok, I'd rather spend the money and go to Yama down the street

sounds like a good deal to me. I can easily eat three or more rolls in a sitting, so that's not a bad deal.

For under 15 bucks I order 5 rolls (Crunchy Crunchy, Snow White, I-10, Caterpillar, and Double Spicy) along with Spicy Snow Crab salad, Tuna Tataki, and Pepper Tuna and some fried shrimp heads, and I demolish it all. In my opinion it's damn strong for the price... I think it's $14.95 at lunch and $22.95 at dinner, so I stick to lunch.
