How do I make Mexican Cheese Dip

Sorry if this has been discussed a lot.
Every recipe I look up has cumin in it so I know that those recipes are not what I am looking for.
Just looking for the very plain white queso that you get when you order it with your salsa before your fajitas come out.
Plain jane, white cheese dip. Shopping center mexican style.

Make a couple of tablespoons of butter and flour roux. Cook it only until it starts to change color from white to blonde. Add milk until the desired consistency is reached. Add shredded cheese of your choice. Heat until the cheese is melted and sauce is smooth.

Thanks but i am looking for the exact way the mexican restaurants do it. Not just a generic cheese sauce.

Not sure if you just want to make it yourself but every chip aisle in grocery stores has several brands of it.

It's just Mexican Dipping Cheese melted. They typically add milk to it.
The El Viajero brand is pretty readily available in Wal-Mart and other grocery stores.

Melt white American cheese in a saucepan. Add milk to desired consistency. Throw in a few diced Green chiles and diced jalapeños

Go to Walmart and get 1 lb of WHITE AMERICAN CHEESE FROM BEHIND THE DELI COUNTER. do not deviate from those instructions. It must be American cheese. It must come from the deli counter.
Put it in a sauce pan a few slices at a time with a little milk. When you get it all melted, add a small can of chopped green chilis (now these can come from anywhere lol) and a little bit of extra salt.
I add a little cumin but apparently it is poor form to put cumin in queso so I guess just don't put any in.

Simple, easy and very good. 1 can of Refried Beans, and 1 jar of Queso (I don't use whole jar of Queso because I like it thick). Heat on stove. Serve.

If you can't find the mexican dipping cheese, Velveeta actually makes a queso blanco now as well.
I'm with the others that I like to add green chiles to mine. I've basically forsaken good old Arkansas cheese dip (yellow velveeta and rotel) in favor of queso blanco.

American cheese, white cheddar, salt, butter, milk. Our neighbor owns a Mexican food restaurant and we asked him this very question a while back.

I just get the white Mexican queso at the grocery and melt it. There are typically 2 kinds - crumble and melt. I microwave it and that's it.

The white queso from Costco tastes the same or better than most restaurants.

I use velveeta (you can get the white version), chop up a can of pickled serrano peppers, and add a can of diced tomatoes.
Everyone seems like to like it better than the rotel version.
