I’m craving Home made potato chips. Where can I get some between BR and Mandeville?

It's not rocket science. Thinly slice peeled potatoes, drop in hot oil until they fry crisp, remove to drain and season.
Not exactly gourmet stuff here.

We have a slicer add on for our stand mixer. It slices a potato in like 12 seconds for chips. Its an old school all metal version from when hobart made them. It has several thicknesses, I like them thick sometimes almost like a thin French fry disk or sometimes I go super thin for a good potato chip crunch. Hop on ebay and get an old one!

Me, because I suck at this. Seriously. I don’t understand it. They either are soggy or burnt. I can never get them crispy. I’ve tried them in peanut, canola, and coconut oil. No dice. Tried air fryer. Tried baking. Nothing. I don’t get it. Thick or thin. Doesn’t matter.
I just cannot do this.

Seriously. Novices blow stuff like that off, but it matters.
I've made tons of Latkes without one, but I'm old enough to have screwed up the right amount of eggs, etc., to understand what oil (albeit 1/3 inch or so, not deep frying) is doing for what I need it to do.
If a restaurant offers in house chips (American version, obv) in addition to fries, I will, every, single, time, choose the chips. I get the craving.

Slice and parboil them for 3 min in water that has a splash of vinegar in it

Success at frying chips is mostly about oil heat. When you start at 365F and toss in the raw potatoes the water in them boils off vigorously and greatly cools the oil towards 212F. Get a thermometer that clips to the pot and watch the oil. When the temp drops to 350, stop adding raw potato and turn the heat up. By the time it's back to 365, the 1st batch will be done...remove and add more.
Some homes have the high BTU stoves and big pans that make this simple. Most of us don't! Restaurants have big fryers with thermostats. Good luck.
