The hostess is often the least experienced person in the restaurant. It's where they stick the new people who aren't qualified enough to be a waiter or waitress and can't cook in the kitchen or tend the bar.
I'm guessing at least 90 percent chance she had no idea about menu shortages.

Actually, everything went as it was supposed to. Hostess sat you, waitress informed you, chef apologized
Maybe you should’ve ‘cussed out’ the chef for not ordering enough food for the weekend. But I guess it’s easier to fuss at a young girl

Pro tip: if a restaurant tells you that the wait is an hour or longer, they want you to leave. That's why they told you the wait was an hour.

Hour or more wait is standard at many many places.

Is it? I've always gotten the impression that "an hour or longer" wait is kind of a euphemism for "we'll get you in when and if we can, but we won't be upset if you leave".
ETA: I'll refrain from commenting on the absurdity of the OP. He's always struck me as being a weirdo.

I worked as a host many, many moons ago in highschool. There was a method to quoting waiting times. I never actually got to an hour using that method. Only time we hit an hour was when the manager walked up and told me that the wait was now an hour until he told me otherwise. Usually because the kitchen was in the weeds.

I guess some you have never been to Houston’s and other decent, not great, places that don’t take reservations. An hour during prime time is normal at those places.

I disagree with you, which isn't a surprise. I've found the wait times to always be stretched and we've gotten in sooner.

These days that is what it is for me. It's funny watching a party of 25 walk in on a Friday night at 7:30pm thinking they are getting sat right away. Yes, the wait is already over an hour. The size of your party probably means it will be a lot more if you want to sit together. Texas Roadhouse has it right by setting up their dining room to not accommodate big parties. Turn and burn is where the money is at. Not a party that chews up a bunch of tables and sits around talking for 2 hours

I called that morning when they opened to let them know I was coming in with a party of 8 between 730-815 and asked if that would be a problem being they don't take reservations. She said they won't take reservations even for larger parties but to come on up and they'll get us in though wait could be up to an hour.
We chose this restaurant because we'd been there in the past and enjoyed it. Fantastic food, pretty sweet downstairs/cellar space, good drinks, etc. We all agreed it was well worth the wait. And for those of you claiming an hour is a "we don't want you" kinda wait, I don't live in Bumpkinsville, LA...restaurants get busy and hour wait times are not bad on a weekend.
As far as dropping an Fbomb on the hostess, I don't feel bad, at all. Nor should I. The point of the post was to perhaps spur others to share stories of bad experiences at restaurants, restaurants displaying incredible incompetence, but nah...TD gonna TD.
