Gumbo in a crock pot

Since we seem to be on a Gumbo kick on the F&D Board, I want to ask the question, anyone ever made Gumbo in a crockpot? How did it turn out? I currently have minimal cooking equipment, so making a roux, using fresh trinity, browning anything is not going to happen. I would love some Gumbo and a crockpot is currently my only choice. So I was curious if anyone has ever used one?

So you don't even have a knife?

Why don't you make your gumbo ahead of time, freeze it, then defrost and serve it from the crockpot?
OK.. Now that I see Afghanistan.. Guess you can't make it ahead.

What do you have access to, other than the crock pot?

I can get frozen chicken and frozen sausage. For vegetables I was going to go the canned route and ship them from netgrocer.com.

You might could pull off some sort of chicken soup. Gumbo may be hard without being able to cook a roux. I doubt you cans find any Savoies around there..

Oh man. I suppose I get wanting a taste of home, but it sounds like anything you try to make would just make it sadder. You really can't find onions there?

Maybe you can get premix from Cajun Grocer? Hell, post an address and I'll send you some. Or, email otis263@yahoo.com. Do it.

If you can get louisiana brand powdered gumbo base, all you need from there is a heat source and water and meat. it is not mommas gumbo but it will certainly hit the spot in your situation.

If Gris Gris can make a roux in an oven, I bet it can be done in a crockpot.. It get's hot enough.
You'll have to stay on top of it, and keep draining grease out, and you probably will need to be careful about the length of time you cook it, because the chicken meat will fall apart if it's cooked too long.
But I'd wager it can be done. Cook your roux on high, and stir frequently.. I say you got this.

Yes you can make gumbo in a crock pot. It's not the best, but it can be done. If you don't have access to roux, try a can of brown gravy mix from Tony's. Again, not Ideal, but it'll work sort of.
Throw chicken, sausage, seasoning, water, whatever veggies you can get (preferably onion and garlic if not use powders) and some premixed up brown gravy mix.
Set on high for 2 hours, then lowers to low all day. Crank to high just before eating for an hour. It should get the job done.
I know I may get down voted to hell for this, but if you are that far from home with limited resources, it'll eat.

The trick is DON'T PUT THE LID ON IT.
Use the Louisiana Fish Fry brand gumbo base. Whisk it together with some water or boxed chicken stock, and then add in your meats, okra if using it, and seasonings. Let it roll. It'll act just like a slow simmering pot, but it won't keep in all the sweat and make it watery.
The problem you're going to run into is your seasoning veggies like onion and bell pepper,(and celery if you use it). While using the powdered roux can help you avoid using a fry pan ... if you don't saute those seasoning veggies first, they'll make your gumbo taste like onion soup. Gotta saute them before going in the crock pot.
Maybe find a mix of dehydrated onion/bell pepper/celery?
