I used it less frequently than I used to, but in big batches of soup or beans and maybe chili, it sure is handy.

I tend to prefer red or yellow bell pepper to green, so that's another reason I chop my own, especially in smaller dishes or batches.

those pre chopped mixes are wet, that’s why they don’t brown
in a pinch you can spread it out on a baking sheet and let it dry first

by the time you do all that you could just chop it fresh though

Exactly. Try making rice & gravy using Guidry's onions. It ain't happening.

I am sure some sort of preservative is being used such as citric acid and other stuff. These items will prevent and change how items are being cooked relative to fresh vegetables.

cut onions release water and sulfenic acids
the acids act on the peppers and celery and start to break them down over time

Flip side to this is:

(1) I have only gotten this fresh - no issues
(2) there was a very good distro of each veggie - you can look at them, clear container


If this is some shite laying around the grocery store wilting away I can assure you they would go out of business.

Also, I did not say I don't use fresh cut, but the wife is tasked with that while I open a bottle of wine and pour it for her and thanking her for her service to the cause.

I've never been a fan of frozen seasonings like these. If you let them defrost, they have the texture of mush. I prefer to cut up my own seasoning fresh and use it that way.

I can see its value to folks on the go and not having a lot of time, especially when both husband and wife are working daily.

It's just not for me, but I have the time being retired to use fresh.

I've used Guidry's often for certain things. I think they're fine. I agree that there are more onions than anything and I will chop a few extra pieces of celery or bell pepper sometimes. It really depends on what I'm making and time.

They're fresh and taste fine. You just have to make sure to buy them when they're first delivered because I've seen the containers where the vegetables have sunk and have a lot of liquid in them.

I used the Pic Sweet frozen vegetables for the first time about a year ago when I was sick and wanted to make a bean soup. Not enough energy to do much. I used the Hurst's 15 bean, added a hock and sausage with the frozen veggies and threw it all in the crock pot. Took about 5 minutes. The frozen vegetables worked just fine. I wouldn't use them in anything in which they needed to be sauteed, though.
