Grillades and Grits without round steak

I was thinking of making this later next week and all the recipes I see have round steak which I refuse to use in anything

If you make it do you use round steak or another cut? I was thinking even pork would make more sense

ETA: I’ve never made grits and grillades. I was just curious about your aversion to round steak.

I trim a pork butt and slice it up.

Get some seven steak, or some sirloin. Cut into strips and pound flat.

I would agree with those who believe you can use whatever cut of beef or pork you want. IMO, whatever you use, make certain it is tender. I do not like tough Grillades in my grits.

That's why I'd prefer to stay away from round steak

I do 1” by 3 “ strips. Marinated per the recipe I have in the Recipe Book. Then stew them down. Excellent.

Recipe in river roads one or 2 is really good....
I enjoy a good round steak and rice and gravey...

If you buy a pork butt from Rouses, they will slice it thin for you to make grillades.

We use pork tenderloin medallions pounded a bit. Delicious every time.
