Grass fed beef texture

So, my wife is on a kick of only eating grass fed beef

I've made burgers and chili and the texture is just very off putting to me. It is so chewy.

Do y'all have any recommendations? I know she doesn't like the texture either and I'm hoping she'll agree to go back to grain fed

I had been using that kobe style ground beef at Sam's and it makes so delicious burgers.

buy a bunch of grass fed stickers and slap them on regular ground meat

also, tell her grass fed meat is worse for the environment (which is actually true)

She's not doing it for environmental reasons, she is just convinced it's much healthier.

I guess I'll just be eating chewy hamburgers until this phase passes.

Nothing better than the gravy from grass fed beef. The chuck, eye of round, 7 steak, and shank make excellent gravy for rice and gravy. We enjoy the flavor of the steaks more than grain fed, but I admit that both the wife and I grew up eating pasture raised beef. It’s a bit tougher , but for us the beefy flavor makes it so much better than grain fed.

If the label says “grass fed” and not “100% grass fed”, that cow was finished on grain

Not a fan either. I can't cook grass fed steaks correctly either and they don't taste right to me.

I like it better but I agree with OP it doesn’t make very good burgers.

Maybe so but I've bought grass fed steaks from Iverstines a few times and they never turn out as good as the ones I buy from Rouses or Calandros for whatever reason.

I know you aren't supposed to cook them quite as long but something always just tastes off to me.

Buy from a farmer instead.

Bad beef is bad beef, regardless of feed. If grass fed cattle are raised well, eat the right grass, and are slaughtered/aged/packaged well - the meat is fantastic.

I’ve bought at least 7 whole animals over the last few years and they’ve all been great, but each animal is different. The best animal I’ve had was an old dairy cow they decided to kill.

Try steaks from Cutrer's out of Kentwood. They have a store in Kentwood and at the Farmer's Markets in BR on Thursday and Saturday.

It's good stuff.

I have no issue with the flavor, it tastes great. It is just the texture I'm not thrilled with.

It is healthier, but not that much. It may contain more minerals, but it really isn't a big deal.

Actress Kristen Schaal grew up on a Colorado cattle ranch. When she was on Marc Maron’s WTF podcast, he asked if they ate the cattle.

She said they ate one that had to be butchered before it went to the feedlot, but the meat wasn’t any good “because it was grass fed.”

I thought that was pretty funny, with many touting grass fed beef, and ranchers preferring grain fattened beef to what they raised on their farm.

we bought a half cow this year. RIsed local and they did finish w a little grain.

The flavor is excellent and the gravies are so much richer

I agree. But we still buy grass fed on occasion.

I was told that most producers actually finish their cows with grain for the last 4-6 weeks prior to slaughter, in order to give them a little fat and tenderness.

Easy way to tell is by price. Grass fed cattle take significantly longer to reach finishing weight. If it’s not at least $3-4/ lb higher than regular beef, it was finished on grain
