Threw a roast in the crockpot this morning before going to a dr.'s appointment. Got a 3 1/2 lb. angus choice chuck roast, i believe. I'm pretty excited about it.

I took the roast, and cut a few slits in it and stuffed with garlic. Then grinded some black pepper and kosher salt and sprinkled all over. Heated up a pan with some olive oil and seared it good on all sides. Had a very pretty look to it. Opened up the crock pot and threw in some onions, garlic, jalapenos, carrots, and turnips. Placed the roast on top, then covered with remaining vegetables. Mixed together a can of cream of mushroom soup, dry onion soup, and veal stock, and poured that on top. Then sprinkled with some thyme and sage and its on low and slow for 9 hours. FWIW, i've made crock pot roast before, but this one just looked incredible after the sear.

What are some of your set and forget quick recipes for the crock pot? I have 2 and need to utilize this more so i don't have to worry about food when i get home from work.

Easiest thing ever:

chicken breasts
packet of taco seasoning
jar of salsa

When you get home, you have shredded chicken taco/nacho meat that is delicious. I do it all the time.

I've actually made this before. I think either you or another poster gave the recipe.

Red beans (or any beans) and sausage, just throw in stock, garlic, and onion, a few dashes of angostura bitters. When you get home, take out some of the beans, blend them up, and cook the rice.

Taco soup- Ground meat, taco seasoning, black beans, pinto beans, corn, and stock. When you get home, eat with rice or chips.

Chili- is very easy, can tomatoes, tomato paste, ground meat, stock, chili seasoning (create your own), bean is that is your thing

Roast is the obvious favorite- carrots, potatoes, mushrooms

I've experimented with trying to make gumbo in the crock pot, no great success yet, but I'm close.

Chicken breasts, packet of dry ranch seasoning and bottle of wing sauce. Shredded buffalo chicken.

Chicken breast, good dry rub, bottle of Stub's Sweet Heat. Shredded BBQ chicken.

My two go-to crock pot dinners

Great thing about a croc pot is you can make your own recipes. Just get some meat you like and vegetables and throw it all together.

My latest favorite is spare ribs. Cut them up throw them in the pot with some lime juice, bbq sauce, srirachi for heat, and whatever spices you like. Let it cook for 5 or 6 hours.

Boneless skinless? I might try this with some thighs.

Damn, why did I never think of this?

You think I can do butter and hot sauce since that is all that is in homemade buffalo sauce?

Yep. I've done it with both. I'm more of a thigh person, but this is one of the only recipes I'm okay with using breasts to make.

Chicken curry in the crock pot is really good too. I try to stay away from the processed jarred/bagged "simmering sauces", but I'd be lying if I said I hadn't used them before. The Stonewall Kitchen brand of simmering sauces are very good.

pulled pork is so easy to make

3-4 lbs. pork roast , boston butt
1 sliced onion
2 minced garlic cloves
1/2 cup chicken broth
1/2 cup apple cider vinegar
1 cup favorite BBQ sauce

Combine all in crock pot, slow and low for 10-12 hrs or HIGH for 5-6 hrs

Remove pork, shred, add back into crock pot and cook for another few hrs. Spoon onto toasted bun and add more BBQ sauce as desired.

It breaks down/shreds, but I wouldn't necessarily call it watery. Like any meat in a sauce, though, you would probably want to serve using a slotted spoon.

I use enough chicken to where it isn't swimming, so it isn't quite this liquidy (photo from Google images)

You probably could. I have made my own buffalo sauce and poured in and it was legit but bottled is quick and easy. I honestly like the BBQ shredded chicken better. Sometimes I'll add brown sugar, lee & perins and some garlic to the chicken before I pour in the Stub's.

What size jar of salsa? I'm going to give that a go this week. How does it not dry out?

The thread below has some recipes and also a post with multiple links to some other threads that might interest you.

ETA: I forgot to put in the link! Sorry about that!

I've done Pioneer Woman's drip roast in the crock pot for sandwiches and it's quite good.

Other than beef or pork roast, I can't think of much I've cooked in the crock pot other than some stocks. I tried crock pot French onion soup recently and it was pretty good, though I think when I doubled the recipe, it may have been too many onions for them to actually caramelize as the recipe indicated they would. The flavor from them was quite good in the soup, though. I had to turn it up to high for a while to get them to brown more, though.

The average store brand/On the Border/etc. I believe it is 16oz.

If you Google "crock pot salsa chicken", there seem to be a few similar recipes

I don't use it for a big variety of things either. A lot of people seem to do red beans, but I do not care for it.

For the people who do it (I saw someone post in this thread), boil your beans for 10 minutes first. You poison your kidney by putting raw beans into the pot.

Red kidney beans contain high levels of a toxin that occurs naturally in beans, Phytohaemagglutinin (also known as Kidney Bean Lectin.) If raw or undercooked red kidney beans are eaten…well, bad things happen. Let’s just say you’ll be getting to know the pattern of tiles in your bathroom very well.

Not that i plan on making red beans this way, but doesn't the crock pot cook the beans?
