This is what I was going to recommend. A brisket/cheese empanada. Just be careful the cheese doesn't blow out when frying. Or a brisket/yellow rice/corn empanada. Or use potato in there somewhere.
You can freeze them if you end up making to many.

Nacho, tacos, and burritos all sound like a great way to use leftover brisket. Recently, I made brisket and kinchi fried rice that was a pretty damn good use of left over brisket. I don't have a recipe, per se, but I just add chopped kimchi and diced brisket to the fried rice.

I always make a cheese steak style sandwich with leftover steak and brisket. I chop it into pieces and melt butter in a skillet. Toss in a couple of jalapeño to sizzle in the butter and then toss in the cold meat. Just as it heats up, throw a grip of cheese in the pan and when it starts to get melted, throw it on a buttered/matted bun and tear it up.
Or, baked potatoes with chopped brisket/fixings.

Brisket and sausage gumbo. Use a beef stock instead of chicken stock and make a dark roux. Also, meat from the flat works well since it is less fatty. It’s great!

We used to sell thousands of servings per year brisket fries off our food truck. Every time I make a brisket now, wife asks where is the brisket fries. She doesn't really eat BBQ.

This may sound crazy, but if I have flat leftover that sits in the fridge for a few days and dries out, I love dicing it and putting it in spicy ramen.
I’ll also chop up leftover brisket for nachos, quesadillas and stuffed potatoes.

1. Shells and cheese then add your own real cheese then bake then top with brisket
2. Throw into skillet with eggs and scramble with sharp cheddar, wrap in large flour tortillas

I always slice it per serving and if there is any leftovers, which is rare, it will be a small piece of the flat still together unsliced. Vacuum pack it and save it for the next pot of chili.
