Fried flounder

Caught a few flounder along with some trout the last few weekends and my kid wanted to keep and eat them whole. The best and easiest way I've found to scale them is to just get a wire brush and vigorously brush both sides. I then just cut off the head and slice a checkerboard pattern on it. Then just shake in seasoned fish fry and drop in the fryer. Once done, just take a fork and pop the squares up right off the bone.

If you've never done this, I highly recommend it.

Nice, love me some flounder. Unless it's a really small flounder I've mostly had fried filets.

I also love fried flounder but one thing I do is remove all the bones except the backbone. I call them the side bones. I use a filet knife and catfish skinning pliers to pull them out. It makes is easy to eat.

I used to fillet flounders, then stopped that ridiculousness about 10 years ago.

Whole, scaled with one of those pit grill brushes.

Yep. And I just use my same spoon as bream to scale. My wife is a flounder catching gal. Caught 4 as big as a five gallon bucket lid a couple weeks ago.

I made a crispy scored flounder, Savannah style, some time ago. I can't recall the recipe other than it used rice flour which made it very crispy.
