Fried catfish

Frying catfish for my daughters birthday on Thursday. I’m wanting to do something different than the basic Louisiana fish fry like I normally do.
I’m open to all recipes, tips, and tricks anyone is willing to share. Thanks!

This is probably just a camp thing, but fry sandwich bread slices in the hot fish grease after everything else is done. You can start your diet on Monday.

Just some sliced onions thrown in the grease for a second and then served up with the fish and fries is delicious to me.

Do you usually do an all corn meal mix? Maybe follow Mike Andersons recipe, corn meal with a little flour. I prefer it that way. Not a fan of only cornmeal battered fish.

Find a friend to give you some sac au lait instead?

When frying for a crowd (using filets) I like to slice them on the diagonal into 2 or 3 pieces to get sharp crispy edges.

Not quite thin fried like Middendorf’s but that’s what I aim for.

Season, soak in buttermilk, bread and fry.

What is your “normal” method of frying fish?

You mentioned Louisiana fish fry. Which type?

Do you use mustard and hot sauce?

Gotcha. The blue bag is more of a corn meal heavy mix. Try either Louisiana New Orleans style or Zatarains Seasoned with Lemon. I usually use the latter. These two mixes have more corn flour and make for a lighter coating.

Cut fish into small strips. Always good for parties as the fish goes further and cooks faster. And makes for a tender bite. Just don’t over cook.

Forget the egg. Slather the catfish with a mixture of hot sauce and mustard. Not too much though as it will make the batter cake up on them. Fry immediately. Don’t let them sit too long in the mixture as they will pick up a stronger hot sauce taste unless that is desired.

Egg wash on catfish? Hmm.

Do yourself a favor…. Buy some Louisiana Hot Sauce, Crystal Hot Sauce, Yellow Corn Meal & Seasonings (Tonys/S/P/whatever). Soak the catfish in Louisiana Hot sauce and season your corn meal until it’s “almost too salty”…. Batter the soaked catfish in the cornmeal and fry till crispy. Use Crystal at the table. ??.

I agree with the don’t change what you do crowd since your daughter asked you to fry catfish. She obviously likes yours.

Otherwise, I’m a seasoned cornmeal only fan. I don’t care for batter or anything thick. Thin and crispy unless whole catfish.
